The Palfry, Derby

The project:

Design and install a kitchen with feature open pass on the first floor of a new contemporary restaurant and wine bar.

The result:

Located in the historic Old Blacksmiths Yard on Sadlergate in Derby, The Palfrey is a newly refurbished contemporary restaurant and wine bar, offering an eclectic mix of food and drink, including specially created dishes using the best local ingredients.

Bettaquip worked with head chef Danny Edwards on the design to create a first floor open kitchen with a feature open pass with decorative heat lamps leading direct into the restaurant. The space was a challenge as the building was irregular in shape and seating space for the restaurant needed to be maximised. Another challenge was the logistics of actually getting the equipment up the stairs to the first floor kitchen. This was resolved by using specialist lifting equipment to move the largest items through an upstairs window.

The engine room of the kitchen is a 10 Grid Rational SCC Cooking Centre, supported by an Electrolux 6 burner range, salamander and Valentine fryer. A combination of Electrolux and Adande counter refrigeration makes efficient use of the limited space within the kitchen.  Dishwashing is catered for by an Electrolux hood dishwasher, which offers a high throughput from a small floor footprint to make the best use of limited space. Bespoke fabrication was specified to fit the irregular angles of the room space.
