The project:
Refurbishment of the main
kitchen and basement prep kitchen to make the best use of the
available space and improve the work flow at this country retreat
in Staffordshire that combines spa treatments and gourmet lakeside
dining with luxury events and wedding venue facilities.
The result:
Bettaquip proposed a solution
that included a central island cooking suite with open pass into
the restaurant, under counter refrigeration for mise en place and a
new dishwashing layout based on a rack dishwasher. Included in the
proposal was a new extraction hood and Altro safety flooring
throughout with hygienic UPVC cladding to all walls. Working in
close partnership with the clients appointed builders and M&E
contractors, Bettaquip completed the refurbishment over a three
week period to minimise disruption to normal business.
The new equipment and layout has
made a dramatic improvement to the working ergonomics within the
kitchen to improve the speed and efficiency of service. The kitchen
team are also benefiting from the improved working conditions with
lower working temperatures and an atmosphere free of products of
combustion following the introduction of the latest cooking
technology, This also reduces both energy costs and environmental
impact as the Electrolux induction cooking hobs only operate when a
pan is present and the Frima Vario Cooking Centre cooks faster than
conventional alternatives and is over 95% efficient.
The new wall and floor finishes
enable easy cleaning of work areas to ensure a hygienic environment
and aesthetic visual appeal which is important with the new open
kitchen layout.
The automation of the
dishwashing area with a Meiko rack machine has made a major
difference to a busy area of the kitchen enabling staff to manage
the increased capacity in the restaurant and at peak times during
banqueting events.
